Bitter tasting things are easily dismissed by many – but think of some of the awesome things brought to you under the heading bitter. Cocoa. Marmalade. Olives. Citrus Peel. Quinine. Campari. I digress...
Le Pamplemousse $17
The gentleman in this particular bunch. Tanquaray10, fresh grapefruit juice, Cardamon and Chamomile tea and a dash of Peychaud’s Bitters stirred to a frosty temperature.
Bitter & Twisted $21
This innocent looking harlot will claim true followers of the bitter path, and seduce those who think they will enjoy strong drinks with a grapefruit edge. The concoction is made from Grappa, Mirabelle Eau de Vie, Liquor de Pamplemousse, Gentianne, and Lemon Bitters. Finished for your bitter pleasure with a grapefruit zest.
The Goldfrappe $20
A sexy strong drink invented over a particularly intense session that may have involved knives and dice, it wraps you in a cherry haze and will soothe frazzled senses. Averna, Framboise Sauvage Eau de Vie (black cherry), Campari and Peychaud’s Bitters are stirred and served on the rocks, or neat as you prefer. Finished with the afore mentioned magic Cherry.
Negroni $17
Countless tall but probably true tales have risen from nights fuelled by Negronis. The bartenders mixing delight – this classic is an equal blend of Beefeater Gin, Campari and Dubonnet Vermouth.
Sour
Acid in its many forms puts an edge on things. Drinks with edge are what this section is all about.
Air Poland $17
Fine Ginger and Green Apple liquors are shaken like a trolley dolly in mid air turbulence with Zubrowka Vodka, Lime juice and egg white to produce a light and lovely drink that is finished with a Nutmeg & Cinnamon bang.
El Mariachi $17
This one takes no prisoners. Tequila crashes into an avalanche of Peppadew (a mild chilli), lime, coriander and paprika, and a seriously smokey tobacco infused tea to take down the opposition with sheer force of flavour. Salut!
The Corpse Reviver Lullaby $17
A classic that has been modified by our cocktail aficionados to inspire visions of the living dead at tea time. A fine blend of Aviation Gin, Lillet Blanc vermouth, Cointreau and fresh lemon juice, finished with an absinthe rinse and a Chamomile tincture.
20th Century Cocktail $17
An unusual combination of flavours that works its magic any time we are trying to impress the ladies, this 1930’s classic cocktail is a taste sensation that makes them want to go Aaaaah! Made here with equal parts of Beefeater Gin, White Creme de Cacao, Lillet Blanc vermouth and fresh lemon juice.
Braintease (non – alc) $8
For all those who love a sour kick in their life but who are not in the mood for alcohol this zingy combination of Cucumber, Wasabi, fresh lime juice and apple juice will perk you up nicely.
Sour & Sweet
Fall Blood $17
Fresh Tamarillo is muddled into a velvety drink mixed with Stolen white rum, Dubonnet vermouth, a touch of fresh Lime and apple juice. The rich concoction is strained into a martini glass and finished off with a fine dusting of dried Cranberry and Cinnamon.
Earl Tanq $17
Tanquaray Gin is infused with leaves of Earl Grey tea which we then make into a martini with a hint of Orange Colombo (an orange aperitif), and finish with lemon zest.
Tickled Pink $20
Shaken up from a blend of Tequila Cuervo Tradicional, St. Germain elderflower liquour, fresh lemon juice and passion fruit syrup. To finish we add a touch of pink grapefruit and serve it over a mountain of crushed ice. Gets those taste buds dancing!
Hemingway Daiquiry $17
The travelling gentleman made this his personal favourite, and it has since been present on many a fine cocktail list around the globe. Here we mix the drink wit blend of Stolen White Rum, Maraschino Liqueur, pink grapefruit juice and lime juice.
Aromatics
Aladins’ Lady $17
For all lovers of Jasmine – Russian Standard Platinum Vodka is stirred with Lillet Blanc vermouth, Jasmine Tea Syrup and orange zest. Simple sophistication in a martini glass.
Smokey Gibston $18
Watch out folks, this one is an adventure off the beaten track, but very sits comfortably in this section of our list. A classic Gibston (Gin, vermouth and cocktail onions) is adjusted with a hint of Laphroig Quarter Cask whisky and cocktail onions pickled in balsamic vinegar.
Rose, by Damien $17
Devised by methods akin to the fine art of creating a bestselling scent, this ultra secret recipe may or may not contain Rose Vodka, Ginger and Green Lemon Liqueur, fresh lemon juice, watermelon and fresh mint. Ultimate refinement is achieved by a touch of Orange Bitters and served over crushed ice.
Crimson Tide $17
This blend of honeyed red capsicum puree, Stolen white rum, Cocliquot (a French blossom) Liqueur, Campari and lemon bitters will be enjoyed by all friends of a blood coloured drink of aromatic nature.
Scotch Tea $18
A simple but effective blend of Lapsang Suchong, Higland Park 12 year old wisky and Dolin Rouge vermouth that builds on the flavour profile of its main ingredients.
Fresh off the Cress $17
Here is a drink that should get you talking – the adventurous mixture of Lychee liquer, fresh watercress, Aloe Vera juice, Plymouth Gin and cucumber over crushed ice will bounce around your palate.
Violettes’ last dance $20
Crème de Violette always makes for a heady concoction. Here we take Jose Cuervo Tradicional, Dolin Dry vermouth, Gingerbread liqueur, crème de Violette, and a mix of Peychaud’s and whisky barrel bitters to create a flavour symphony in your mouth.
A kiss on the neck $17
Gentle and tasty, this drink may lead to some heavier action further down the line... Saffron Gin, Lychee liqueur, crème de Violette, a jasmine & saffron syrup and a couple of drops of orange bitters are stirred to perfection.
Vieux Carre $17
This cocktail is named after the French quarter of New Orelans where the drink was invented in the late 1930’s. A fine blend of Wild Turkey rye whiskey, Courvoisier cognac, Dubbonet vermouth and Benedictine.
Lavender Rehab (non-alcoholic) $8
This flavour explosion is a simple hard shake of lavender infused sugar, lemon juice and Ch’i. Trois Fraiche!
Herbaceous Let your tongue frolic with fine green leafy things. Exhale. Enjoy.
B & B Ginger Mac $20
Courvoissier, Benedictine and a stones Ginger Wine wash. Simple. Clean. Herbacous.
Thors’ Hammer $17
Let the thick flavours of this godly wake up drink kick you into next month! What was originally mixed in Valhallas’ lounge is now mixed in our very own subterranean cave – Arette Tequila, fresh ginger, chilli flakes, fresh lime juice, sugar and egg white are smashed to pieces and reborn in a brandy balloon.
Hendrick $25
The gentle one in this powerhouse selection. Hendricks Gin is smashed with a hint of fresh pepper, fresh coriander and yellow capsicum, to make a refined herbal martini.
Basilisk $21
The Basilisk is a mythical little dragon, and this fine and well balanced drink will make you think of sprouting your own wings. Russian Standard Imperia vodka is stirred with Orange Colombo and Valdespino dry Sherry, then finished off with a fresh leaf of Basil and a whole Peppadew chilli.
Batman’s cave drink (Brodies Virginia Old Fashioned) $20
Two southern states combine to create sublime flavours in this inspired libation. First we make a syrup from fine tobacco leaf which we then mix with Buffalo Trace bourbon, fresh blood orange juice and Dolin dry vermouth.
Grapes of Wrath $17
Chilli flakes meet fresh grapes and quince paste. To this we add Pisco (a Peruvian spirit) and a cinnamon quill. Proceed with caution!
Mint Julep $17
One Frederick Booker Noe III’s favourite cocktails. He has his with honey rosted pecans, and so should you! The official drink of the Kentucky darby, this delight should be matured whilst you enjoy a beer or aperitif, as it will take 5 minutes of frosting time for your mix of fresh mint, sugar and Makers Mark bourbon to reach serving point.
